Comforting Sweet Potato Hash for Weight Gain

What you’ll need:
- 2 cups cubed peeled sweet potatoes
- 2 apple chicken sausage links
- 3 teaspoons olive oil, divided
- (10 ounce) bag shaved Brussels sprouts
- Salt and pepper to taste

Step 1
Place sweet potatoes in a microwave-safe dish and add ¼ inch water. Cover tightly with plastic wrap and microwave on High until fork-tender, about 3 minutes; drain and set aside. -
Step 2
Heat 1 teaspoon of oil in a large nonstick skillet over medium heat. Meanwhile, dice the sausages and add to the oil once hot. Stir occasionally until golden brown, about 3 minutes. Remove the sausage and set aside. -
Step 3
Heat the remaining 2 teaspoons of oil in the pan over medium heat. Add Brussels sprouts and cook for about 3 min, stirring occasionally. Combine the sweet potato and sausage. Season to taste with salt and pepper to taste and serve!
